Ingredients

SALAD
2 cups iceberg lettuce
.5 cups (or 6 slices) cucumber
.5 cups sliced tomatoes
.5 avocado
1 tsp sesame seeds
DRESSING
1/3 cup peeled and chopped carrot
1/3 cup peeled, seeded and chopped cucumber
2 tsp fresh ginger
2 tsp sesame oil
2 tsp rice vinegar
2 tsp water
1 tsp shallot
salt and pepper to taste
Directions
Mix together salad ingredients and split into 2 bowls
Place all the dressing ingredients except the oil into a blender or food processor.
Blend while adding soil
Serve dressing on side or drizzle over salad.
