Definitely not an every night dessert but a wonderful treat that packs it's own fair share of protein. Decadent and rich but not overly sweet. Ingredients

2 Tbl unsalted butter at room temperature
1/3 cup granulated sugar, plus a wee bit more for ramekins
3 large eggs room temperature seperated
1/8 tsp cream of tartar
5 1/2 ounces bittersweet chocoltae (60% cacao), melted
2/3 cup whole milk
1 tbl + 1 1/2 tsp cornstarch
1/8 tsp salt
3 tbl sour cream
Directions
Preheat oven to 400 degrees. Brush 3 10oz ramekins generously with the butter: coat with granulated sugar. Whisk whites with a mixer until frothy, about 2 min. Add cream of tartar: whisk until soft peaks form. Add 1/3 cup granulated sugar: whisk until medium peaks form, about 5 minutes.
Set melted chocolate in a bowl. whick milk into cornstarch and salt in a saucepan over medium-low heat. Allow to simmer. Cook, stirring, until thick, 1-2 min. Remove from heat. Whisk into chocolate (it's ok if mixture seperates). Whisk in yolks and sour cream. Gently fold in egg whites.
Fill ramekins evenly with batter. Bake on baking sheet., rotating halfway through (approx 8 min), until souffle begins to rise but centers are still liquid, total time is approx 16 min.
Souffles can be garnished with powdered sugar if you wish but fresh berries are an even better option.
