Introduction

Number of Servings: 6

Ingredients

    250 grams of extra lean ground beef
    200 grams of part skim mozzarella
    8 OZ of fat-free ricotta cheese
    3 tbsp of grated light parmesan cheese
    1 raw onion cut into small peices
    8 tsp of light margerine
    150 grams (half a large eggplant) of eggplant slices 1/8"
    200 grams of zucchini (one large) sliced 1/8"
    250 grams sweet potato slices 1/8"
    1 cup of your light choice of tomato pasta sauce
    Salt and pepper

Directions

- Oven to 350░F (180░C)

- Saute the onion in 6 tsp of margerine medium heat

- Once the onion is golden and soft add the beef

- Brown the beef for 10 minutes

- Add the tomato sauce + salt and pepper, bring to boil, simmer for another 10 minutes

- Mix the ricotta, parmesan and 100 grams of mozzarella

- Grease a pan/pyrex 13X9 or 10X10 with 2tsp of margerine

- Layer them:
1. Sweet potato slices
2. 1/2 beef sauce
3. 1/2 cheese mix
4. Zucchini slices
5. 1/2 beef sauce
6. 1/2 cheese mix
7. Eggplant slices

- Cover it with foil

- Leave the pan in the oven (preheated to 350) for one hour

- Remove the foil

- Sprinkle the remaining 100 grams of mozzarella (I like to use sharp cheddar cheese here! same nutritional values)

-Put it back in the oven for another 10 minutes for top cheese to melt

- Turn the broil of your oven on and leave the pan for 5 minutes for the top cheese to golden

- Remove from the oven and wait for 15 minutes before serving!
