Ingredients

    5 cups uncooked egg noodles
    1 cup (8 oz) reduced fat sour cream
    1/2 cup mayo with olive oil, reduced fat
    2-3 tsp lemon juice
    2 tbsp butter
    1/4 cup all-purpose flour
    3 cups fat-free milk
    1/3 cup plus 2 tbsp shredded parmesan, divided
    1 pkg (9 oz) frozen chopped spinach, thawed and squeezed
    1 pkg (6 oz) reduced sodium chicken stuffing mix
    1/3 cup seasoned bread crumbs
    2 pouches (6.4 oz each) light tuna, in water

Directions

preheat oven to 350...gather all ingredients

cook noodles according to pkg directions...in a small bowl combine sour cream, mayo and lemon juice, set aside

in large pot melt butter...stir in flour until blended...gradually stir in milk...bring to a boil and cook for 2 min or until thickened...remove from heat...stir in 1/3 cup parmesan until melted...stir in sour cream mixture then add spinach, stuffing, bread crumbs and tuna...mix well

drain noodles...fold into mixture...spray 13x9" pan with cooking spray...place mixture in pan...sprinkle with remaining parmesan

cover and bake for 35 minutes...uncover and bake an additional 5-10 minutes or until lightly browned
