Ingredients

    110 grams or 5 large (U-16/20) shrimp- preferably from America or Mexico
    peeled deveined and sliced into 4ths.

    1 TBS fresh basil sliced thinly

    2 tsp fresh chopped parsley

    1 large beefsteak tomato
    cored and scooped out like a pumpkin

    1 lemon

    1 tsp fresh chopped garlic

    1/4 cup romaine lettuce or spinach

    1 tbsp Braggs Amino Acids

    Pam with Olive Oil

Directions

Tomato Prep:
1. Spray the hollowed out tomato with Pam inside and out.
2. Season all over with salt and pepper.
3. With the tomato on a sheet pan, evenly blacken the tomato inside and out with a blow torch. You do not want to burn it, just give it a bit of char and cook it a bit.
4. When done blackening it, hold it in a 350f oven while the shrimp is being prepared.

Sauté the Shrimp:
1. Start with an already hot pan, spray it with Pam toss in the shrimp and quickly sauté them, add the garlic to the shrimp and continue cooking until the shrimp are cooked throughly.
2. Occasionally, spray with more Pam or add a bit of water to keep from scorching.
3. Season with salt and pepper, add the herbs, and juice of 1/2 the lemon.

Put Them Together:
Stuff the tomato with the shrimp mix and serve on the bed of shredded romaine or spinach with Braggs Amino Acids and the other 1/2 of lemon juice and salt and pepper.

    Soooo good! I used water instead of oil to cook the shrimp and dried herbs instead of fresh and it was DEEE-LISH! Will be eating this again. - 7/22/14

    Isn't this more a phase 3 or 4 recipe. I thought you could only eat 1 protein and 1 veggie in phase 2. - 6/8/12

    Wow! Wow! Wow! I actually added the sccoped tomaties bck in and sauteed with the shrimp (why to I always hear Bubba from Forest Gump whenever I say or type the word "shrimp"??). It was sooooooo delish! Thanks Jody! - 12/8/11
