Ingredients

    1/2 Cup Steel Cut Oats
    1/2 tsp. Cinnamon
    1 Packet PureVia (natural sweetener)
    1 tbsp. Flax Seeds
    1 tsp. Chia Seeds
    1/2 Cup Nonfat Cottage Cheese
    1 large Egg
    1/2 Cup Blueberries
    1/2 tsp. Extra Virgin Coconut Oil

Directions

Blend the following ingredients:
Steel Cut Oats
PureVia
Cinnamon
Flax Seeds
Chia Seeds

Add the remaining ingredients except the Coconut Oil and Blueberries, continue blending.

Stir in the Blueberries.

Coat the frying pan with coconut oil over low heat. Add 1/3 cup of batter per pancake. Cook until brown on both sides.

Serving Size: Makes (4) 4-inch pancakes.
