Introduction
Based on a Mexican bean salad from the Food Network, this tangy dish is sure to please. Great as a side dish or as a dip with tortilla chips.Note: Nutrional information is not coming out correctly. Ingredients

salad:
1 (15 oz.) can of light red kidney beans
1 (15 oz.) can of cannellini beans (white kidney beans)
1 (15 oz.) can of great northern beans
10 oz. of frozen sweet corn, thawed
1 medium red onion, diced
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 jalapeno pepper, seeded, deveined, diced
dressing:
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
1 tbsp of lemon juice
juice and zest of 1 lime
3 garlic cloves, minced fine
1 handful fresh flat leaf parsley, chopped
3 tbsp of sugar
1 1/4 tbsp of salt
1/2 tbsp of black pepper
1/2 tbsp of ground cumin
1/2 tbsp of chili powder
dash of hot sauce
dash of worcestershire sauce
** any kind of cooked beans can be used, these are just my personal favorites
** for a more mexican flavor, substitute cilantro for parsley
Directions
1. Drain and rinse beans and corn. Combine in large mixing bowl with onion and peppers.
2. Whisk together ingredients for dressing. Pour over salad. Mix to coat salad.
3. Chill thoroughly, at least 1 hour, and serve cold.
** Flavors will continue to improve as it sits. For best results, make a day ahead and chill overnight.
