Introduction

Ingredients

    1 tbsp olive oil
    1 onion diced
    3 to 5 Carrots diced
    3 cloves garlic diced
    2 large stalks celery diced
    2 zucchini or summer squash diced into cubes
    3 to 4 white or red potatoes peeled and diced into cubes
    1 tsp dried oregano
    4 sprigs fresh thyme or 1 tsp dried
    5 leaves of fresh basil
    salt and pepper to taste
    1 quart of chicken broth or veg broth (low sodium)
    1 can (15 oz) chopped tomatoes
    1 can cannellini beans drained and rinsed
    Large bunch of kale or fresh spinach

Directions

saute onions, garlic, celery and carrots in olive oil. When softened, add squash, and potatoes. Allow to cook 10 min. Add in broth, herbs, canned tomatoes. Bring to a boil. Add greens. Simmer 15 min until all vegs are softened. Serve with grated cheese. Can add pasta or meat. Can substitute other vegetables or greens.
