I got this recipe from SELF Magazine. They called for olive oil to saute the pepper and onion - I just use cooking spray and a splash of water to save calories.

I got this recipe from SELF Magazine. They called for olive oil to saute the pepper and onion - I just use cooking spray and a splash of water to save calories.

Ingredients

    1/4 cup chopped red bell pepper
    1/4 cup chopped yellow onion
    3 tbsp grated potato
    1 whole egg
    1 egg white
    1/2 tsp ff milk
    3 tbsp shredded cheese

Directions

Preheat oven to 350F. Saute pepper, onion and potato until potatoes are soft, about 5 minutes. In seperate bowl, beat eggs and milk. Add veggies to egg mixture then stir in cheese (and salt/pepper to taste - I like to add some red pepper flakes too - YUM!). Coat 3 muffin tins with cooking spray and divide batter evenly among them. Bake until eggs are cooked through, about 20 minutes. 100 calories per muffin and well worth every one! :)
