Ingredients

    3 oz chicken breast (skin/bone removed)
    1/3 C Mandarin Oranges
    1/4 C Shredded Carrots
    1 C Shredded Romaine Lettuce
    Emerald 100 Calorie Pack Walnuts & Almonds (or nuts of your choice)

    *optional add-ins include:
    tomato
    cucumber
    grapes
    raisins


Directions

1. Dice chicken in small, bite size pieces. Season with desired spice and saute in a non-stick skillet with 1 tsp of extra virgin olive oil. Once done, approx 5 minutes, place on paper towel to drain and cool.

2. Wash, drain, and shred lettuce. Grate carrot. Drain oranges if using canned. Nuts can be chopped or used as is.

3. Combine all ingredients and serve with your desired dressing. I use a homemade raspberry viniagrette on this salad and it's delicious!
