Ingredients

    2 cups basmati rice
    2 skinless/bonelss chicken breasts chopped up
    1 large egg scrambled
    1 tbsp extra virgin olive oil
    1 cup each of broccoli and bean/carrot medley
    340g cooked shrimp (no tail, deveined)

Directions

saute chicken and shrimp in olive oil until cooked then add vegetable. Cook rice separately and add vegetable mixture on top. Serve with soya sauce and/or franks red hot.

Serving Size: Makes 6 1.5 cup servings
