Ingredients

    2 med Sweet Potato
    7 chix thighs (skinless/boneless)
    3 Jennie-O italian sausage links
    1 med onion, chopped
    2 cloves garlic chopped
    1- 15 oz can whole tomatoes
    1- 15 oz can crushed tomatoes
    1-15 oz blackeye peas, drained
    1/2 tsp hot sause
    3/4 tsp salt blend
    1 tsp mixed herbs
    1 tsp cracked black pepper
    1/2 tsp allspice
    1/2 tsp cumin
    2 tbsp tomato paste
    fresh parsley or basil to garnish- optional

Directions

Cut potato 1/2-1" cubes. Cut chix and sausage 1'" pieces. combine all in crockpot(Veggis on bottom). Cover,simmer 4 hours until sweet pot tender and chix cooked. Garnish w/ parsley or basil.
