Introduction

This recipe was passed on to me my fiance's Mom who's been making these for over 40 years. It's simply delicious and a healthy comfort food packed w. great nutrients.
You can cut out the chili and salt pork if you like - they are still great!

Number of Servings: 8

Ingredients

    1 lb. Pinto Beans
    ½ Onion Sliced
    2 Cloves Garlic minced
    Small piece of salt pork chopped
    6 cups water
    1 ¼ tsp. of salt
    4 strips bacon
    1 cup canned tomatoes
    3 Chile’s Serrano’s finely chopped
    2 large sprigs Cilantro
    1 Carta Blanca Beer (any kind will do)

Directions

Put beans, onion, garlic and pork into large heavy pot. Add water and bring to a rolling boil. Reduce heat, cover and cook gently for about 2 hours adding boiling water as needed. Add salt and cook uncovered for about 15 minutes.

Cut bacon into small pieces and fry until slightly browned. Add Tomatoes and rest of the ingredients. Cook over a higher heat for 10 minutes. Add beans and cook uncovered on low for 15 minutes. Serve hot.
