Introduction

I received radishes with tops in my CSA package. The greens looked so good, I wanted to use them. I am allergic to raw radishes due to my hay fever, so I assumed I was also allergic to the raw greens, so here's how I cooked them I received radishes with tops in my CSA package. Number of Servings: 2

Ingredients

    2 lg eggs
    4 lg egg whites
    1 bunch radish greens
    2 slices bacon
    garlic powder
    1 tsp olive oil
    2 oz cheese curds w/ dill

Directions

Prep: Wash radish greens and dry thoroughly. Slice to 1/2 inch slices. Cook bacon in microwave between paper towel sheets for 2 minutes at HIGH; dice. Slice cheese curds to 1/4 inch slices. Beat eggs and egg whites in a medium bowl.

Cook: Heat olive oil in a large skillet. Add greens and garlic and cook until greens are wilted. Add bacon and cheese curds. Pour eggs over mixture and allow bottom to cook. Continue cooking and stirring until eggs are just wet.

Serving Size: Makes 2 servings
