Introduction

I love quick and easy dishes that I can have ready in minutes on workdays, so I make these on Sunday afternoons, and warm one up to eat with my coffee for breakfast during the week. Sometimes I take one with me to warm up for a break later in the morning, if I decide to have something different for breakfast. If you use your imagination, you can easily change this up with different veggies and seasonings. Enjoy! Ingredients

    1 Bag Broccoli Slaw
    5 Scallions sliced
    1 cup sliced Fresh Mushrooms
    12 Slices Deli Thin Sliced Black Forest Ham- Oscar Meyer 98% fat free
    6 Eggs
    a little chicken broth (about a half cup)
    Salt Free Savory Seasoning to taste
    Black Pepper to taste
    Salt to taste

Directions

Saute broccoli slaw, scallions, mushrooms and potato in chicken broth & seasonings to taste until veggies are as soft as you like, and liquid is gone and veggies begin to brown on bottom. *just use a small amount of chicken broth, I used about a half cup*

Line large muffin tin cups with 2 slices of the really thin sliced Black Forest Ham (or whatever kind you like in the Deli Thin 98% Fat Free Variety ... adjust calories if you use something else)

Fill cups with the cooked veggie mixture, and crack an egg on top of each.

Bake in 400 degree pre-heated oven about 10 minutes or until eggs are set to your liking. (you could also just whip up the eggs or stir in with the veggie mixture if you like and divide evenly among the 6 cups)
