This is a quick, easy to store salad. It's a change of pace from typical lettuce salad. A great summer time lunch or dinner! I make it in bulk for parties or to bring for my lunch. Ingredients

    1 (7oz) package of Red Quinoa, cooked and then chilled

    1 (12oz) package of frozen sweet corn, thawed

    1 cup finely chopped fresh cilantro

    1 cup thinly sliced green onions

    2 plum tomatoes, diced

    2 avocados, peeled pitted and cubed

    1/2 cup Light Balsamic Vinaigrette

    (1/2 tsp salt and 1/2 tsp pepper if desired, not in nutritional calculations)

Directions

Mix quinoa, corn, cilantro, green onions and tomatoes into a bowl. Fold in avocados and dressing. (Season with salt and pepper if desired.)

Serve chilled.

Serving Size: Makes 10 Servings, about 1 Cup per serving
