Ingredients

    4 Banana or Cubanella Pepper
    8 oz. ground extra lean pork
    0.5 tsp. salt
    0.5 tsp. pepper
    1 tsp. ground fennel

Directions

Mix the salt, pepper and fennel with the ground pork.
Cut the tops off the peppers, remove seeds and stuff with pork.
Place in a shallow baking dish, add a little water, cover and bake at 350 for approx. 60 minutes.
We usually have this lite pepper/pork recipe with sliced potato's that were cooked in olive oil on the stove top until brown.

Serving Size: makes 4 peppers or 2 servings
