Introduction

I make these ahead and freeze them. I take two to work for easy low carb lunch. I make these ahead and freeze them. I take two to work for easy low carb lunch.
Number of Servings: 12

Ingredients

    1/2 pkg (10oz)frozen chopped spinach
    12 large eggs
    cup shredded cheese
    1/2 cup diced mushrooms
    1/4 cup diced onions
    6 oz heavy cream
    1 pat butter 0 c

Directions

Heat oven to 350F
Spray the muffin tin cups with the cooking spray.
Saute mushrooms and onions in butter, add spinach, cook for 1 more minute.
Whisk Eggs, add cream.
Place 2 T of mushroom mixture into bottom of each mugfin cup.
Place 2 T of cheese ove mushroom mixture.
Pour egg mixture over the top of each cup to fill aprox 1/2 cup.
Bake at 350F 20 minutes.
You will know they are done when a knife inserted in the middle comes out clean.
Remove from cups to serve.

Serving Size: makes 12 quiches
