Ingredients

6 round corn tortillas (6")
1/2 Tbsp olive oil
1/3 cup dry quinoa
2/3 cup water
1/4 teaspoon sea salt
15 oz can black beans (1 3/4 cup cooked beans) drained & rinsed
3 Tbsp lime juice
1/2 tsp cumin powder
1/2 tsp onion granules
1/2 tsp sea salt
2 cloves garlic, minced or pressed
1/8 tsp cayenne pepper
1/2 cup grated or chopped carrots
1/2 cup graded or finely chopped cabbage
3 green onions (scalions), trimmed/chopped
2 avocados, peeled and chopped (1/4 avocado per tostada)
Directions
Quinoa and water - boil covered on medium heat. After it boils, reduce to simmer until all of the water is absorbed, about 15 min. After done stir in the 1/4 tsp salt. Set aside.
Preheat oven to 375. Brush or spray tortillas lightly with olive oil on both sides. Bake for 3-5 min, then flip and bake for 3-5 min more. Watch closely that you don't burn them! Goal- crisp and brown.
Combine black beans, 1 1/2 Tbsp lime juice, cumin, onion granules, salt, garlic, and cayenne in blender or food processor. Then heat in a small pan until warm. Transfer to bowl for table.
In small bowl toss carrots cabbage and scallion with lime juice. Set aside.
Finally assemble tostada at the table! Spread tostada with black bean mixture, top with quinoa, and veggies. Garnish with avocado chunks.
Serving Size: Makes 6 tostadas
