Ingredients

    Kirkland chicken breast (canned - drained), 7.4 oz
    Hard Boiled Egg, 4 large
    Heinz Dill Pickle Relish, 2 tbsp
    Best Food Light Mayonnaise, 1/4 Cup
    Diced raw celery, 1/2 cup

Directions

Hard boil the eggs (I use an egg cooker for perfect eggs every time). Open the can of chicken and drain thoroughly by pushing the top against the contents and holding it over the sink until no more fluid runs out of the can. Pour chicken chunks into a bowl and begin shredding/mashing them. When the eggs have finished cooking, immediately immerse them in extremely cold water, let sit for 5 minutes, and then peel. Put 4 of the eggs through an egg slicer going "longways", then turn it and slice it going "sideways". Add the eggs to the mashed chicken and stir well, continuing to mash the eggs up a little more. Add the celery, two heaping tablespoons of dill pickle relish, and then moisten the whole thing with 1/4 cup of light mayonnaise. I also add a dash of Kroger Garlic And Herb Zesty Seasoning.... no significant calories or nutrients, but tastes great. Makes 6 servings of a little over 4 oz each.
