Introduction
This recipe deletes any white processed food ingredients. I added whole wheat flour, steel cut oats and ground flaxseed for fiber. Walnuts and cranberries for antioxidant benefits and Omega 3 goodness. Great for grab and go breakfast or quick snack.This recipe deletes any white processed food ingredients. Ingredients

Dry Ingredients
1 cup whole wheat flour
3 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1.5 tsp cinnamon
1/4 tsp nutmeg
1/4 cup brown sugar
2 tbsp ground flaxseed
1/2 cup whole oats, quick cook (I use steel cut oats)
Wet Ingredients
1 cup mashed bananas
2 egg whites
1/2 cup skim milk
1 tbsp vanilla extract
.33 cup walnuts, chopped
.33 cup dried cranberries
Directions
Soak oats in skim milk for 15 minutes
Preheat oven to 375 degrees
Spray muffin pan with nonstick cooking spray or line with paper baking cups.
Add mashed bananas to oat mixture along with applesauce and egg whites. Mix

Add banana-oat mixture to dry ingredients. Mix and fold in Vanilla, walnuts and cranberries. Spoon into muffin pan. Bake for 18- 20 minutes or until toothpick inserted in center comes out clean. Let cool before serving.
