Introduction

This is a lower fat version of my daddy's cornbread recipe. It's wonderful with beans, peas, cabbage or anything else you would prefer to have cornbread with. Ingredients

    2 cups self rising corn meal
    1 cup self rising flour
    1 large egg
    1 cup fat free milk
    1 cup 1% milk

Directions

Preheat oven to 425. Spray 12" cast iron skillet with non-stick spray and set into oven to heat. Measure corn meal & flour in to bowl. Add egg and milks. Mix well. Take skillet out of oven and pour batter into heated skillet. Bake for 30 minutes.

Serving Size: 1/8th of skillet
