Introduction

Vegetarian soup with lots of vegetables, beans and rice Vegetarian soup with lots of vegetables, beans and rice
Number of Servings: 8

Ingredients

    1 cup canned corn
    1 cup carrots diced
    1 cup chopped zucchini
    half medium onion diced
    1 cup fresh cabbage chopped
    1 clove garlic finely chopped
    dash black pepper (to taste)
    1 tbsp parsley
    6 cups vegetable broth (chicken broth can be used)
    1 cup cooked whole grain brown rice
    1 can great northern beans (do not drain)

    *salt can be added if desired


Directions

Chop all vegetables and set aside.

Cook rice in a separate pot.

In a soup pot, bring broth to a boil.

Add all vegetables and spices, leave beans and rice aside because they can stick to the bottom of the pot and the vegetables need time to boil.

Boil ingredients until the vegetables are tender, then add rice and beans.

Heat until it is all the same temperature.

Yields about 12 cups
Serving size is 1.5 cups

    My family really liked this. I added 2 cups of water and cooked 1 cup of brown rice in it. I also added 1/4 cup of Bragg's Liquid Aminos (could use tamari) when adding the beans at the end. I have a lot in my freezer now for quick meals. Thanks for sharing! - 1/9/08
