Introduction

very high in protein and fiber; very light kneading; easy! very high in protein and fiber; very light kneading; easy!
Number of Servings: 16

Ingredients

    2 cups warm water
    1 Tbl yeast
    1 Tbl Sugar
    2.5 cups whole wheat flour
    1 cup vital wheat gluten
    1/4 wheat germ
    1 tsp. salt

Directions

- mix water, yeast, and sugar and let the yeast grow for 15-20
mins.
- in a separate bowl, blend together the rest of the ingredients
- add the dry ingredients to the yeast and stir until it forms a ball
- knead a few times in the bowl- dough will be kind of rubbery
- put a towel over the bowl and let rise until double, about an hour
- punch down the dough and place in a greased loaf pan
- let rise until double again
- bake in a 375 oven for about an hour
- let cool slightly before slicing
