Introduction

Easy to make, and no fuss. Easy to make, and no fuss.
Number of Servings: 4

Ingredients

    1 cup of Long grained white rice. cooked according to directions.
    Channel Catfish, 2 fillets, cut into bite sized chunks.
    1 small Onion chopped well
    Garlic, 3 cloves chopped
    Basil, 1 tbsp
    Saffron, 1 tsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Potato, raw, 2 medium, cut into bite sized pieces.
    Bijol, 1 tsp. This can be found in the Spanish section of your grocery store.
    Curry powder - mild, 2 tsp
    3 cups of water

Directions

In a medium sized pot add the water and all of the veggies.
Bring to a medium boil for 20 minutes.
After 20 minutes add all of the spices. Boil for another 10 minutes, then add the catfish. Let this simmer for about 15 to 20 minutes covered.
Serve in bowls over a large spoonful of the rice.

    Incredible!
    This was wonderful. I added an extra teaspoon of curry powder and a small can of corn. I would definitely make this again. I'm going to take it to work with me tomorrow for lunch. - 4/9/08
