Introduction

A beautiful blend of color! Couscous, black beans, edamame, tomato, zucchini and feta. A beautiful blend of color! Couscous, black beans, edamame, tomato, zucchini and feta.
Number of Servings: 4

Ingredients

    3/4 C. plain couscous (dry)
    1 can (15 oz) of black beans (feel free to use fresh!)
    1 tomato (or more)
    1-1 1/2 C edamame, shelled
    1/4 - 1/2 C zucchini (sliced, chopped, you choose!)
    1/4 C red onion
    1.5 oz Feta cheese, crumbled



Directions

Prepare couscous according to package. (I used chicken broth for added flavor, you can use vegetable broth or just water). While you're waiting for the couscous to cook, chop up all of your veggies and feta. (Prepare edamame if needed. )

Mix all together. Serve immediately for freshest taste!

**You can certainly use other beans, your favorite vegetables, etc. It's a free-for-all! Anything goes! Enjoy!
