Ingredients

1 lb. chicken cut into bite sized pieces
1 lb. pasta, penne rigate or similar small tube pasta
1 small onion, diced
2 cloves of garlic, minced
6 tbsp. basil pesto
salt and pepper
1/4 cup Parmesan Cheese, shredded
Directions
Heat a pot of water until it boils. Salt the water and add the pasta. Cook until tender.
In another pan heat a tbsp. of olive oil over medium-high heat. When pan is hot add onions and garlic, cook for 3-5 minutes or until tender. Add chicken, salt and pepper, and cook until chicken is no longer pink.
Drain pasta and reserve 1 cup of the starchy cooking liquid. Add the pasta water and the pasta to the pan with the chicken. Add the pesto and mix well. Then let simmer until the water is absorbed. Add 2 cups of frozen chopped spinach and mix until warm. Add 1/4 cup Parmesan cheese and stir until melted.
Serve with garlic bread if desired.
