Ingredients

    DRY:
    1/2 C whole wheat pastry flour
    1/2 C all purpose flour
    1/2 C brn sugar
    1/4 C evaporated cane juice (or white sugar)
    1/2 tsp baking powder
    1/2 tsp baking soda
    2 tsp ground cinnamon
    1/4 tsp ground ginger
    1/4 tsp ground cloves
    1/4 tsp ground nutmeg

    WET:
    1/2 C egg whites (about 4-5 eggs)
    1/4 C unsweetened applesauce
    1/4 C canola oil
    1 1/2 C finely grated carrot

    ICING:
    4 oz neufchatel cheese (light cream cheese)
    3/4 C powdered sugar, sifted

Directions

Preheat oven to 350.

Lightly spray 8x8 pan with cooking spray.

Mix dry ingredients with whisk in medium size bowl until well combined. (Feel free to adjust spices to your liking--these amounts will give flavor, but not intense "spice".)

Measure egg whites and whisk slightly. Add oil and applesauce and whisk again.

Pour wet into dry and mix just until all powder is gone, gently fold in carrot. (If you like nuts, raisins, etc in your cake..add it now)

Bake until set, about 25-30 min.

**Cool Completely** before frosting

To make frosting, lightly beat cheese with mixer to fluff, slowly add powdered sugar while beating, stopping to taste and adjust sweetness to your liking. Top on cooled cake and add any or all: chopped walnuts, chopped dates or raisins, chocolate chips, chopped candied ginger (these toppings listed NOT included in nutritional info).
