    Cottage Cheese, 2% Milkfat, 2/3 c
    Frozen Orange Juice Concentrate 1/4 c
    Whole Wheat Pastry Flour, 1 cup
    Baking Powder, 1 tsp
    Egg whites 1/2 c

    you can use any type of 100% fruit juice concentrate you would like


preheat skillet to med high and spray with veg oil

blend cottage cheese, fruit juice concentrate and egg whites until smooth. add flour and baking powder and mix.

add 1/4 cup of batter to pan for each pancake. turn when underside is brown.

Serving Size: makes 7 1/4 servings of batter (7 pancakes)
