Introduction

This is calculated with regular mayo and olives, but you can re-adjust to your liking and fit it into your tracker. This doesn't hold over well - the dressing gets absorbed and the flavor goes away so eat it all at once or add a little more vinegar and yogurt when you serve it again to refresh it a little bit. Ingredients

    2 cups whole wheat rotini
    1/3 cup mayonnaise
    1/3 cup low-fat plain yogurt
    2 Tbsp olive oil
    1 Tbsp red wine vinegar
    1 clove garlic, minced
    1/8 tsp salt
    1 cup cherry tomatoes, halved
    1 cup bell pepper, chopped
    1 cup carrots, grated
    1/2 cup scallions, chopped
    1/2 cup kalamata olive, pitted and chopped
    1/3 cup slivered basil

Directions

1. Boil and drain pasta accordning to package. Refresh under cold water and allow to drain thoroughly.
2. Whisk mayo, yogurt, olive oil, vinegar, garlic and salt in a large bowl.
3. Add pasta and toss to coat.
4. Add remaining ingredients and toss to coat.
