Introduction

Number of Servings: 6

Ingredients

    -- 1 red onion, diced
    -- 4 cloves garlic, minced
    -- 2 T EVOO
    -- 1 lb ground turkey
    -- 1 lb Italian sausage
    -- 2 T dried oregano
    -- 3 T dried basil
    -- 1/2 t sea salt
    -- 1/2 T pepper
    -- 1 can (14.5 oz) diced tomatoes, juices drained
    -- 1 can (6 oz) tomato paste
    -- 5-6 zucchinis, thinly sliced the long way with a mandolin slicer
    -- 8 T (2 small cans) sliced black olives

Directions

1) Preheat oven to 350.

2) In a large soup pot, saute onion and garlic in EVOO for about 3 mins.

3) Add the meat and brown.

4) Season meat mixture with all dry ingredients. Add drained diced tomatoes and tomato paste. Mix well.

5) In a 9x11 glass baking dish, place a layer of sliced zucchini in the bottom, making sure to overlap the long slices. Ladle on a thick layer (about half) of the meat mixture. Top with all black olives in a 3rd layer.

6) Top olive layer with another layer of sliced zucchini, then top with a final layer with remaining meat.

7) Cover tightly with aluminum foil and bake for 30 mins. Remove from oven and let sit for 10 mins before slicing and serving.
