Introduction

Makes a tasty spread on sandwiches and burgers, or a dip with tortilla chips or veggies.

Ingredients

    1 can (15.5 oz) chickpeas, rinsed and drained
    3 cups fresh cilantro, chopped
    1 garlic clove, minced
    1 Haas avocado, skin and pit removed, chopped
    1 tsp olive oil
    1 tsp lemon juice
    Water
    Salt and pepper, to taste

Directions

In a food processor, combine chickpeas, cilantro, garlic, and avocado until finely chopped. With machine running, add olive oil, lemon juice, and water, 1 tablespoon at a time, until mixture is smooth. Season to taste with salt and pepper. Use as a spread on sandwiches and burgers, or a dip with tortilla chips or veggies.

Serving Size: Makes 8 1/2 cup servings
