Ingredients

    1 1/4 lb. pork tenderloin
    2 tsp. Mrs. Dash chicken grilling blend
    1/2 tsp. salt
    1/2 tsp. pepper
    12 oz. green beans (trimmed)
    1 tbsp. olive oil
    1 small onion, chopped
    1 1/2 c. frozen blueberries, thawed
    1/4 c. cider vinegar
    1 tsp. honey, maple syrup, or sweetener of choice
    1/2 tsp. dried thyme

Directions

Heat oven to 400 degrees. Rub pork with Mrs. Dash and 1/4 tsp. salt and pepper and place in roasting pan. Roast 25 minutes or until internal temperature registers ast 155 degrees. When 10 minutes of cooking tim remains, remove pan and spread green beans around pork and drizzle with 1/2 tbsp. olive oil. Stir and return pan to oven. Heat remaining 1/2 tbsp. olive oil in a small saucepan over medium-high heat. Cook onion 3 minutes. Add blueberries, vinegar, sweetener, thyme and remaining salt and pepper. Cook 5 minutes or until thickened. Serve pork with sauce.
