Ingredients

    1 package of smart ground
    1 bag instant brown rice (type that cooks in microwave in 1 minute)
    1 can drained corn or equivalent of frozen corn
    1 can drained and rinsed black beans
    1 jar salsa (or black bean salsa)

    Layer all in a microwaveable dish. Cook on high for 12 minutes. Optional - top casserole with grated parmesan cheese before serving.
