    3 oz cooked shrimp
    10 grams chopped red onion
    10 grams chopped celery
    1/4 tsp light mayonnaise
    1/4 tsp dijon mustard
    1 or 2 lemon wedges
    4 romaine lettuce leaves
    4 slices cucumber
    10 grams bell pepper
    1 hard boiled egg


Prepare shrimp as directed. Chill, then chop into small pieces.

In a salad bowl, layer lettuce, bell pepper, cucumber, and sliced hard boiled egg.

In a small bowl, combine chopped shrimp, celery, red onion, light mayonnaise, and mustard. Squeeze lemon wedges over the top. Mix together.

Put the shrimp mixture in the center of the lettuce bed.
