The lemon olive oil I find essential, that way I get the oil and vinegar mix, but I also find that I don't need to add sugar, because the infused oil has a sweetness to it. Very refreshing. Ingredients

    1 can of black-eyed peas
    1 can of corn
    1 cup of cherry tomatoes, halved
    1/2 cup of carrots, grated (or matchsticks)
    1 Tbsp dried minced onion
    1/2 cup of apple cider vinegar (or red wine vinegar)
    1 scant tablespoon of lemon infused olive oil

Directions

mix it all together and let it sit for at least an hour before serving
