Ingredients

    4 boneless skinless chicken breasts, cooked
    chicken broth
    1 cup of salsa (I use Santa Fe brand)
    1 cup of brown rice (I use instant) cooked
    1 cup shredded cheese (monterrey jack, cheddar, whatever you like)

Directions

season chicken breasts with pepper, garlic powder, and cumin (if desired). Then, add 1/2 can of chicken broth to a pan, and cook chicken in broth. Drain off chicken broth, but reserve it. Add salsa, cooked rice and cheese to chicken, and add some reserved chicken broth if needed. Simmer 15 minutes, or until hot and cheese is melted.
