Introduction

These muffins are moist and nutritious. I added 2 Tbsp of ground flax seeds in place of the egg I was missing and they came out great. Next time I am hoping I will have applesauce on hand and I will sub that for half of the oil to cut the calories even more. These muffins are moist and nutritious. Ingredients

    rhubarb

Directions

Mix together dry ingredients and then add in sugar, oil, buttermilk, egg or flax seed, rhubarb and combine all ingredients together.

Pour into well sprayed muffin tins and bake for 20

    Maybe I wasn't reading this recipe correctly. I didn't see the dry ingredients listed. Also there are no measurements for the other ingredients. - 5/6/12
