Introduction

    1 tsp coconut oil
    0.5 cup matchstick carrots
    3 medium scallions
    one can lite coconut milk
    1 hot pepper, seeded
    1 yellow pepper, chopped
    1 inch chunk ginger root, minced
    1 cup eggplant cubes (I used white eggplant)
    4 cloves garlic, minced
    2 tsp sesame or peanut oil
    juice yields from one lime
    1 tsp coriander seed
    1 tsp cumin seed
    2 stalks lemongrass, minced
    2 tbs cilantro, chopped
    1 head bok choy, chopped
