Took Kitchen Runway's "Mango Bread" recipe and lightened it up a bit! Took Kitchen Runway's "Mango Bread" recipe and lightened it up a bit!

Ingredients

    Ingredients:
    *King Arthur Flour Unbleached White Whole Wheat Flour, 1 cup (remove)
    *Flour, King Arthur 100% Whole Wheat, 1 cup (remove)
    Baking Soda, 2 tsp (remove)
    Granulated Sugar, .5 cup (remove)
    Cinnamon, ground, 1 tsp (remove)
    Vanilla Extract, 1 tsp (remove)
    Brummel & Brown, Original Spread made with Yogurt, 1 Tbsp, 8 serving (remove)
    *Applesauce (Treetop natural, no sugar), 0.25 cup (remove)
    *Dole Frozen Mango - Frozen Mango Chunks, 3 cup (remove)


Directions

Directions:

•Preheat oven to 350º.
•Sift flour into a large bowl. Add baking soda, sugar,splenda, and cinnamon and stir the dry ingredients to combine.
•In a medium bowl, beat eggs, add vanilla extract, melted butter and applesauce. Combine the ingredients and add to dry ingredients.
•Using a rubber spatula or wooden spoon stir to combine the wet and dry ingredients. Fold in the finely chopped mangoes.
•Pour batter into a greased loaf pan and bake for 55 – 60 minutes or until inserted toothpick comes out clean.
•Let cool in pan for 10 minutes. Remove bread from pan and cool on cooling rack.
