Number of Servings: 3

Ingredients

    5 new (red) potatoes, quartered
    3/4 Cup frozen peas
    2 Tbl I Can't Believe It's Not Butter, Fat Free
    1 cup skim milk, divided
    3 Tbl All Purpose Flour

Directions

Wash and quarter potatoes. Place in a medium saucepan, cover with water and heat to boiling. Boil for about 5 minutes. Add frozen peas, return to a boil, and boil 5 minutes more or until potatoes are fork tender. Measure a half cup of cooking water, then drain peas and potatoes. Return pan to heat, add the I Can't Believe It's Not Butter spread and melt, then pour in 1/2 cup milk and reserved water, and heat back to a slow boil. Combine remaining 1/2 cup skim milk and the flour in a shaker and shake until smooth. Pour into peas and potatoes, stirring constantly, until thickened and heated through. Serve immediately. Makes 3 or 4 servings depending on the size of the potatoes.

    going to make tonight, but recipe is missing how much water in the milk/water mixture & how much to combine w/ the flour. think i'll try 3/1. whoops, guess if it says divided, it means in 1/2. sorry for the 1st comment. - 9/28/08
