Ingredients

    Chicken stock, home-prepared or store bought, 8 cups
    Tofu, firm, 1 block
    Egg, fresh, 4 large
    Bamboo shoots, raw, 1 cup = 1 can
    *apple cider vinegar, 1 cup (will add to taste)
    *Bragg Liquid Amino, 8 oz (will add to taste) you can also use Soy Sauce but it adds a lot of sodium
    *Pepper, white, .5 tbsp (will add to taste)

Directions

Makes 8 1 cup servings

Bring Chicken Stock to a boil.

Crack open eggs and mix scrabble style in a separate bowl.

Slowly drop segments of the egg mix into the chicken broth.

Add a pinch of White Pepper (less is better to start off with because it's strong stuff, and adds flavor as the soup cooks).

Slice the tofu into edible size chucks. Add bamboo shoots and tofu to soup.

Add vinegar and Braggs (or soy sauce) to taste. Usually about a cup each. You want the soup to have a deep flavor with a slight tartness and a hint of spicy.

Add more vinegar to make it more tart. Add more white pepper to make it more spicy. Add more Braggs to make it less tart or more salty.
