Introduction

By using applesauce instead of oil and whole wheat flour instead of enriched, these are a healthier version of a favorite muffin. By using applesauce instead of oil and whole wheat flour instead of enriched, these are a healthier version of a favorite muffin.
Number of Servings: 30

Ingredients

    1 3/4 cup whole wheat flour
    1 tsp. baking soda
    1/2 tsp. salt
    1/3 cup applesauce
    2/3 cup honey
    2 eggs
    1 cup canned pumpkin
    1/4 cup hot water
    1/3 cup mini semi-sweet chocolate chips

Directions

Preheat oven to 325 degrees.

In small bowl, stir together dry ingredients.

In large bowl, beat applesauce and honey together; add eggs and beat well.

Add pumpkin and beat to combine.

Gradually add dry ingredients to wet, alternating with the hot water. Mix well after each addition. Stir in chocolate chips.

Spoon into lightly greased mini muffin tins, bake at 325 for 18 - 20 minutes, or until toothpick inserted into the center of a muffin comes out clean.

Makes 30 mini muffins.

    Incredible!
    I LOVE these! I made them, and I can see me making them again and again. They are sweet, but not overbearingly so. Yum!!! Plus its nice to just pop one in my mouth and know its only 70 calories. - 9/11/09
