Adapted from recipe submitted by Diana Certo, 2011 St. Nicholas Cook Book Adapted from recipe submitted by Diana Certo, 2011 St. Nicholas Cook Book
Number of Servings: 8

Ingredients

    1 T. Olivio margarine
1/4 c. chopped parsley (or 2 T. dry parsley flakes)
2 T. finely chopped red onion
    2 T. mustard
    1 tsp. lemon juice
    1 1/2 c. shredded Swiss Cheese
1 c. fresh or frozen chopped broccoli, cooked & drained
1 c. diced cooked ham (smoked ham is best)
1 (8 oz.) pkg Pillsbury refrigerated crescent rolls

Directions

Heat oven to 350 degrees. In large mixing bowl, combine margarine, parsley, onion, mustard and lemon juice. Blend well. Add cheese, broccoli and ham. Toss lightly and set aside. Separate crescent dough into 8 triangles. On a greased baking sheet, arrange triangles of crescent rolls in a circle with broad bases of triangles overlapping. The center opening should be about 3 inches in diameter and the points should be toward the outside. Spoon ham/cheese filling in a ring over bases of triangles, about 1/3 cup per triangle. Fold points of triangles over the filling and tuck under the bases at the center of the circle. Bake 35 - 40 minutes until golden brown. Serve hot; makes 8 servings. To make ahead: prepare, cover and refrigerate for 3-4 hours. Bake 35 - 40 minutes.

Theresa's note: To serve as an appetizer, cut each of the eight crescent roll pieces into 3 triangles. Arrange as directed, and bake until light golden brown, about 35-40 minutes. Makes 24 appetizers.
