Ingredients

    - 1 tsp extra virgin olive oil
    - 2 tsp diced garlic
    - 2 cans garbanzo beans (chickpeas)
    - 1 can of cream of mushroom soup
    - water
    - 1 tbsp coriander
    - 2 tbsp cumin
    - salt and pepper to taste

    Serve over rice. Meat can also be added, at your discretion.

Directions

Put olive oil and garlic in a large saute pan (or sauce pan) and heat to medium. Cook (stirring occasionally) until garlic is brown, but not burnt. Add the garbanzo beans, the coriander, and the cumin. Then add the can of cream of mushroom soup. Stir. Fill the cream of mushroom soup can with water and add to pan. Cook, stirring occasionally, until until the garbanzo beans are soft, but not too mushy. Add salt and pepper to taste. If the mixture starts bubbling a lot, turn the heat down.

Serve over rice. Enjoy!
