Ingredients

    1 tbsp olive oil
    1 medium onion, chopped
    1 clove garlic
    1 stalk celery, chopped
    1 carrot, peeled and chopped
    1 tsp. cumin
    1/2 tsp. coriander
    1 tsp. chili powder
    1/2 tsp. oregano
    1 tsp. paprika
    2/3 cup Fast Cooking Brown Rice (such as Uncle Ben's Fast and Natural, NOT minute rice)
    1 oz. Whole Grain Linguine, broken into very small pieces
    1/4 cup frozen corn
    1/4 cup frozen peas
    1/2 cup canned diced tomatoes with green chilis
    1 3/4 cups low sodium chicken stock
    1 tbsp. butter or margarine (optional, nutrition info does not include this)

Directions

1. Heat oil in skillet, add onion and cook until translucent.

2. Add garlic, celery and carrot, cook for about 5 minutes.

3. Add spices, rice and pasta and cook until fragrant.

4. Add corn, peas, tomatoes and stock (and butter/margarine if using), bring to a boil and simmer covered about 10 minutes or until rice and pasta is cooked.
