Introduction

Number of Servings: 5

Ingredients

    pork loin chops (or chicken breast) 2 pounds
    Dijon mustard 1/2 cup
    Whitewheat bread crumbs 2 cups
    salt n pepper

Directions

Preheat oven to 375 F. Pat the chops dry and pound thin with a meat mallet., Season with salt and pepper and generously brush with mustard. In a wide shallow dish gently press the meat into the breadcrumbs. Place on a low rack on a baking sheet and let rest for five or so minutes so the bread crumbs will "set" .Bake for 35 to 45 minutes, or until done to taste
You can add spices you like to the breadcrumbs, but we like the mustard flavor.

    Very tasty and easy to make. Took less time to cook and I will use more mustard next time, - 6/10/11
