Introduction

An old Weight Watchers recipe that I picked up at the Pittsburgh Carnegie Science Center "Works" - when my son was a volunteer at the Science Center. Recipe makes about 3 cups and can be served as a meal for two or appetizer for 6 people with Pita Chips, Sesame Flatbread or veggies. Ingredients

    1 T. olive oil
    1/2 c. chopped onion
    1 c. sliced mushrooms
    1 medium, sweet red bell pepper, chopped
    1 small, jalapeno pepper, finely chopped*
    2 garlic cloves, minced
    8 oz. weight or 1-1/2c. Trader Joe's frozen, shelled, edamame (soybeans)**
    1/2 c. Redpack Tomato Puree
    1/2 t. paprika
    1/2 t. freshly ground black pepper
    1/4 t. Redmond RealSalt - Gourmet Kosher Sea Salt (optional)


Directions

Before heating oil in frying pan, follow cooking directions on bag of edamame. Once water comes to a boil, add edamame, and cook for 5 minutes. Drain. Set aside.

In large skillet, heat oil; add onion. Cook over medium-high heat, stirring occasionally, until onion is translucent, about 2 minutes. Add mushrooms, sweet bell pepper, jalapeno
pepper, and garlic; cook, stirring occasionally, 1 minute longer.

Add remaining ingredients; cook, covered, over medium heat, stirring occasionally, about 20 minutes.

Makes 2 servings or serves 6-8 as appetizer.

* When chopping jalapeno pepper, wear plastic gloves.
** Could substitute 1 - 15.5 oz. can of kidney beans for the soybeans (edamame)
