Ingredients

    1 30 oz can Black Beans (I use La Preferida) - drained
    1/4 Cup chopped red pepper
    1/2 Cup chopped red onion
    1 Cup Italian Bread Crumbs
    2 tsp minced garlic
    1 Egg

Directions

Drain the beans and mix all ingredients together until it is the consisentency of hamburger that you can form into patties. If it is too wet, add some bread crumbs...if too dry, add another egg or some of the liquid drained from the black beans.

Place on a griddle or in a skillet with a little olive oil and brown for about 5 minutes each side.

I serve on whole wheat pita bread with avocado, tomato, sliced red onion, and horesradish mustard, but you can eat however you would enjoy a burger. If you like it spicier, add some red pepper flakes, taco seasoning, or chopped jalapeno.

Serving Size: Makes 8 small burgers
