Introduction

Bean Pie Bean Pie
Number of Servings: 24

Ingredients

    2 cups cooked Navy Beans [you can also use canned; drain liquid and rinse]
    4 Eggs
    1 14 oz. can Evaporated Milk
    1 stick butter
    1 teaspoon Nutmeg
    1 teaspoon Cinnamon
    2 Tablespoons Flour
    2 cups Sugar
    2 Tablespoons Vanilla

    3 Pie Shells - I use ready made 9" Graham Cracker Crust.

Directions

1.) Cook beans until soft, or use canned - drain water.

2.) Preheat oven to 350 degrees.

3.) In electric blender, blend beans, butter, milk, eggs, nutmeg and flour about 2 minutes on medium speed.

4.) Pour mixture into a large mixing bowl. Add sugar and vanilla, Mix well.

5.) Pour into pie shells.
Bake about one hour or until golden brown.


Makes 3 Bean Pies.

    Thanks! Needed to know how many calories I downed today. Bought a bean pie yesterday from the Fruit of Islam not far from my home. Bean pie is my achilles heel; I ate half a quarter pie slice and put the rest in the kitchen at work. - 3/19/12
